Pineapple fit cake
Ingredients:
- 1 egg
- 2 tablespoons plain yogurt
- 1 teaspoon light curd
- 1 and 1/2 tablespoons oat bran
- 1 tablespoon skimmed milk powder
- 1/2 small packet of pineapple juice with ginger, preferably without sugar
- 1 teaspoon baking powder
- Vanilla essence to taste
Roof:
- 4 tablespoons skim milk powder
- 100 ml of skim milk
- 1/2 sachet of pineapple powder juice with ginger (the same used for the dough)
- 1 tablespoon of pineapple gelatin
- Pineapple in cubes for cover
Method of preparation:
Beat the egg with a fork or the mixer until creamy. Add the other ingredients stir well until smooth. Place the dough in a microwave-safe container and the desired shape of the cake, leading to the microwave for about 2:30 minutes or until the dough begins to peel off the edges.
For the topping, you should mix all the ingredients until forming a cream, placing on the cake dough. Then add the chopped pineapple to cover.
Pineapple light mousse
Ingredients:
- 1/2 minced pineapple
- 100 ml water to cook the pineapple
- 2 tablespoons culinary sweetener
- 500 ml skim milk
- 135 ml of warm water
- 1 packet of sugar free pineapple jelly
- 1 teaspoon vanilla essence
Method of preparation:
Boil the chopped pineapple in the water with the culinary sweetener for about 6 minutes. Dissolve the gelatin in the warm water and beat in the blender with the milk and the vanilla essence. Add the pineapple to the gelatin mixture and bring to the blender, giving small pulses to mix without grinding everything. Put in a container with the desired shape of the mousse and take to the refrigerator until it hardens.
