This dessert recipe is good for diabetes because it has no sugar and has pineapple, which is a recommended fruit in diabetes because it has few carbohydrates.

Although, this dessert does not have much sugar, it should not be consumed daily, because it has some fat that can end up spoiling the diet, if it is used many times.
Diabetic Pineapple Delicious Recipe
Pasta Ingredients:
- 4 eggs
- 4 tablespoons of wheat flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla essence
Ingredients of the filling:
- 300 g chopped pineapple
- 4 envelopes or tablespoons of Stévia sweetener
- ½ teaspoon ground cinnamon
Cream Ingredients:
- 100 g fresh ricotta
- ½ cup of skim milk
- 6 envelopes or tablespoons of Stévia sweetener
- 1 teaspoon ground cinnamon
Method of preparation
To make the dough: Whisk the whites in firm snow. Add the gems. Add the flour, baking powder and vanilla. Place in a baking dish, greased and floured, and bring to the preheated oven, for 20 minutes. Unmold, allow to cool and cut into cubes.
For the filling: in a saucepan, bring to the fire the pineapple and cook until dry. Remove from heat, add sweetener, cinnamon and mix well.
For the cream: pass the ricotta in the sieve and mix with the milk, the sweetener and the cinnamon.
On a platter, make alternating layers of dough pieces, filling and cream and save in the refrigerator. You can even add a few strands of bittersweet melted chocolate on top.
