A great iron-rich recipe to combat anemia is the stew of beet leaves, as they are rich in non-heme iron, which is a very important element for blood.
But for this iron to be actually absorbed by the body, one should consume food sources of vitamin C in the same meal. So, next to the beetroot stew, take 1 cup of orange juice, or eat acerola or 10 strawberries as dessert.
Ingredients
- 400g of beet leaves
- 1 chopped onion
- 1 bay leaf
- 1 clove garlic
- 2 tablespoons olive oil
- pepper to taste
Method of preparation
Stir in the onion, garlic and olive oil and then add the other ingredients, letting them boil for a few minutes. To soften the leaves, add a little water and cook.
Although the beet is a very rich vegetable in Iron, its leaves are even richer in this nutrient and also in fibers that contribute to a good digestion and functioning of the intestine.
This sauté is very tasty also with the leaves of cauliflower, broccoli or carrot.
