Pancake with Coconut Flour
Ingredients:
- 2 tablespoons coconut oil
- 2 tablespoons milk
- 2 tablespoons coconut flour
- 2 eggs
- ½ teaspoon baking powder
Method of preparation:
Beat all the ingredients in the blender until a homogeneous blend. Make the pancakes in a nonstick skillet greased with a string of olive oil. Serves one to two servings.
Homemade granola
Ingredients:
- 5 tablespoons coconut flour
- 5 chopped nuts
- 10 chopped almonds
- 5 tablespoons quinoa flakes
- 5 tablespoons flaxseed flour
Method of preparation:
Mix all ingredients and store in a glass jar in the refrigerator. This granola can be added in snacks with fruits, vitamins, juices and yogurts.
