As the jabuticaba deteriorates very quickly, the best way to preserve it is by storing it in the refrigerator or by making small bags of homemade pulp, which should be kept in the freezer for up to 3 months.
Jabuticaba Mousse Recipe
Ingredients:
- 3 cups jabuticaba
- 2 cups water
- 2 cups coconut milk
- 1/2 cup corn starch
- 2/3 cup demerara sugar, brown or sweetener xylitol
Method of preparation:
Put the jabuticabas in a pan with the 2 cups of water and take to cooking, turning off the fire when the peels of all the fruits break. Remove from the fire and sieve this juice and squeeze well to remove the stones from the jabuticabas, making the most of your pulp. In a pan, add this juice of the jabuticaba, coconut milk, corn starch and sugar, mixing well until the corn starch dissolves and becomes homogeneous. Bring to medium heat and stir until thickened or in desired consistency. Then transfer the mousse to a clean container, wait a little friar and put in the refrigerator for at least 4 hours before serving.
Strawberry and Jabuticaba Smoothie Recipe
Ingredients:
- 1/2 cup of strawberries (can also be used banana or plum)
- 1/2 cup jaboticaba tea
- 1/2 cup of water
- 4 ice stones
