Freezing fruit pulp to make juices and vitamins is a good alternative to store the fruit longer and maintain its nutrients. When frozen properly, the fruits last about 6 months.

To properly freeze the fruit pulp, it is important to:

- Choose fresh, good quality food without "bruising";
- Wash the fruit thoroughly and remove seeds, lumps and peels;
- Grind the fruit in the blender or processor, preferably with a plastic blade to prevent oxidation of vitamin C.

- Pack in a plastic bag: use a freezer bag and put only the amount that will be used to make juice or vitamins later, since the pulp of the fruit should not be refrozen. All air must be removed from the plastic bag, because the air favors the loss of vitamin C;
- In ice forms: put the fruit pulp in the ice forms, remembering not to fill the whole dish, as the fruit pulp increases in volume when it freezes. In this case, avoid placing the ice forms close to the meat or fish to prevent the smell or blood from contaminating the fruit pulp.
3. How to use frozen pulp
- Soon after removing the pulp from the freezer it can already be used to make juices or vitamins;
- Beat in the blender with water or milk.
Put a label with the date of the freezing in the sachets or write down a note on the refrigerator door as this makes it easy to control the validity of the pulp that has been frozen. In fruits that darken over time like the apple, add a spoonful of lemon juice to the pulp that will be frozen, this helps to maintain fruit color even after freezing.
