Ingredients:
- 5 organic eggs
- 2 apples, preferably organic, diced
- 2 cups brown sugar
- 1 cup and a half rice flour
- 1/2 cup corn starch (cornstarch)
- 3 tablespoons extra virgin coconut oil
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1 pinch of salt
Method of preparation:
Beat the eggs in an electric mixer for about 5 minutes. Add the coconut oil and brown sugar and continue to beat. Add the rice flour, corn starch, baking powder, salt and cinnamon powder and beat. Pour dough into a baking dish greased with coconut, spread the chopped apple, can sprinkle with sugar and cinnamon, then bake in a medium oven preheated to 180º, for about 30 minutes or until golden brown.
