Ingredients:
- 1 envelope or 1 tablespoon dry yeast
- 3 tablespoons water
- 1 egg
- 2 teaspoons of salt
- 2 tablespoons of sugar
- 1 cup warm milk (240 ml)
- 2 cups purple sweet potato pulp (350 g)
- 600 g of wheat flour (approximately 3 ½ cups)
- 40 g unsalted butter (2 tablespoons shallow)
- Wheat flour for sprinkling
Method of preparation:
- Cook the sweet potatoes in the shell until soft. Peel and knead;
- Mix the yeast with water and let stand for 5 minutes;
- Beat in the blender the hydrated yeast, the egg, the salt, the sugar and the milk. Beat well and slowly add the sweet potatoes, knocking. until it gets a thick cream;
- In a bowl, put this mixture and gradually add to wheat flour, mixing with a spoon or with your hands;
- Continue adding flour until the dough does not stick to your hands;
- Add the butter and mix well until the dough is smooth and shiny;
- Cover with plastic film and let stand until the dough doubles in size;
- Divide the dough into 3 pieces and model the breads on a surface with flour;
- Place the breads in a greased form without letting them touch each other;
- Place in preheated oven at high temperature for 10 minutes, lowering into medium oven and letting roast for another 45 minutes or until the dough turns golden. If you wish to make smaller breads, the cooking time should be shorter.
How to consume
To achieve its slimming effect, you should consume up to 2 breads per day, replacing the common white bread. As a filling, you can use unsalted butter, ricotta cream, light curd cheese or a slice of cheese, preferably white cheeses, such as cottage ricotta cheese or frescal light mines.
